Roast or grill chicken for 15 minutes until center of breast reaches an internal temperature of 170F. Warm oven to 350F, warm tortillas in aluminum foil for 10 minutes. In skillet over medium heat, add roasted vegetables mix and oil, stirring often for 5 minutes. Add next 3 ingredients, stirring often for 5 minutes. Cover and simmer 5 minutes. Spoon mixture onto center of warmed tortillas, add chicken, cheese, sour cream and cilantro. Roll up and enjoy!
